New York Style Pizza Sauce

- 800 g Canned whole or crushed tomatoes
- 30 ml Olive oil
- 3 cloves Garlic (minced)
- 5 g Oregano (dried)
- 3 g Basil (dried)
- 10 g Sea salt
- 5 g Sugar
- 1 g Red pepper flakes
Instructions
- Warm olive oil in a saucepan; gently sauté minced garlic until fragrant (don’t brown).
- Stir in dried oregano and basil to bloom briefly in the oil.
- Add crushed tomatoes (or milled whole tomatoes), salt, and a pinch of sugar.
- Simmer gently, stirring, until thickened and bright, about 20–30 minutes.
- Cool slightly; use ~75–115 g (1/3–1/2 cup) per 12" pie.
