New York Style Pizza Sauce

Ingredients

Sauce

  • 800 g Canned whole or crushed tomatoes
  • 30 ml Olive oil
  • 3 cloves Garlic (minced)
  • 5 g Oregano (dried)
  • 3 g Basil (dried)
  • 10 g Sea salt
  • 5 g Sugar
  • 1 g Red pepper flakes

Instructions

  1. Warm olive oil in a saucepan; gently sauté minced garlic until fragrant (don’t brown).
  2. Stir in dried oregano and basil to bloom briefly in the oil.
  3. Add crushed tomatoes (or milled whole tomatoes), salt, and a pinch of sugar.
  4. Simmer gently, stirring, until thickened and bright, about 20–30 minutes.
  5. Cool slightly; use ~75–115 g (1/3–1/2 cup) per 12" pie.
